eaTABLE: Vegan Dinner with the Chubby Vegetarian!

Last weekend I was treated to an extra special dinner by Justin Fox Burks aka Chubby Vegetarian and it was amazing!


So there's this underground dinner thing going on and I was lucky enough to be asked to host it at Live From Memphis. It was surprisingly amazing. I WISH, WISH, WISH that I could go to a Memphis restaurant to get food remotely as good and vegan as Justin's cooking.

It's a small group of foodies and I really don't know how you get "in" the in crowd but you could probably start by checking out Justin's blog, the Chubby Vegetarian.

I invited my mother who is not a vegan or even vegetarian but even so, she enjoyed the food just the same. I on the other hand loved it. I don't think I've ever had such fancy vegan food so I was very pleased with the night's selections.

We had Indian Nachos, a Smoky Brussels Sprout Salad, a Forbidden Black Rice that had mushrooms that looked like scallops, a chickpea fritter slider, an assortment of homemade pickles, Sweet Potato Tamales (awesome!) and finally something I haven't eaten since I went vegan in 1989, Vegan Rice Crispy Treats! Yummie!


Not only does Justin have a successful blog but he's been seen on the Food Networks show The Great Food Truck Race and he's about to publish a book: The Southern Vegetarian from the creators of The Chubby Vegetarian Blog" published by Thomas-Nelson. I've been told that it should be out in 2012 sometime.
